Café Rio Sweet Pork Salad knock-off


Sweet Pork:

  • 3–5 lb pork roast
  • 1 Tbl. each cumin, paprika, onion powder, garlic powder, chili powder
  • 2 tsp. salt
  • ½ tsp. pepper
  • 1 c. root beer or cola
  • 1 c. green salsa

Cut pork into large chunks. Mix seasonings (reserve 2 Tbl. for later) and rub over pork. Pour liquids over pork and cook in crockpot on low for 6–8 hours. Shred when done. Discard all juices except ½ cup. Add remaining seasoning and enchilada sauce mixture below. Cook another 15–20 minutes. Serve over salad or use for tacos.

Enchilada Sauce:

  • 2 c. red enchilada sauce
  • ½ c. brown sugar
  • 8 oz. chopped green chilies
  • 1 c. green salsa

Salad Toppings:

  • Lettuce
  • Cheese
  • Guacamole
  • Pico or tomatoes
  • Chips
  • Black beans
  • Rice
  • Cilantro-lime ranch dressing (Costco)

Optional Dressing Variation:

Mix homemade ranch with guacamole and a little milk to thin it out. It’s delicious!
