Really Good Cornbread


Ingredients:

  • 1 ½ c. cornmeal
  • 2 ½ c. milk
  • 2 c. flour
  • 1 Tbl. baking powder
  • 1 tsp. salt
  • ½ c. sugar
  • 2 eggs
  • ½ c. vegetable oil

Directions:

Mix the cornmeal and milk together and let sit for 5 minutes. Add remaining ingredients and mix together without overmixing. Pour into a 9x9 pan for thicker pieces or 9x13 for thinner pieces. Bake at 400 degrees. Start with 12 minutes for thin and 18 minutes for thick, baking until barely done. Don’t overbake!

Tips:

Serve with honey and butter!
