Granny Annie’s Chicken Pot Pie


Filling:

  • 2 c. rotisserie chicken, small pieces
  • 1 c. peas
  • 1 c. diced cooked carrots
  • 1 c. diced cooked potatoes
  • 1–2 cans cream of chicken soup
  • 1 c. chicken broth
  • Optional: sautéed onions and garlic

Mix all filling ingredients and place in a 9x13 pan.

Crust Topping:

  • 1 c. flour
  • 1 c. buttermilk
  • ½ c. butter, melted
  • Salt and pepper

Mix crust ingredients and pour evenly over chicken mixture.

Directions:

Bake at 400 degrees for 30–35 minutes.

Tips:

We like to 1.5x the crust recipe. If using chicken breasts instead of rotisserie chicken, cook them with a little Tony’s seasoning first.
