Sonya’s Carrot Cake


Ingredients:

Cake:

  • 2 c. Flour (also can use half whole wheat)
  • 1 ½ c. Sugar
  • 2 tsp. Cinnamon
  • 1 ½ tsp. Salt
  • 2 tsp. Baking Soda
  • 4 Eggs
  • 1 ½ c. Oil (I use ½ c. applesauce, ½ c. oil, and ½ c. plain Greek yogurt)
  • 3 c. fresh grated Carrots
  • Walnut halves (about a handful)

Cream Cheese Frosting:

  • 8 oz. Cream Cheese, softened
  • 2 Tb. Milk
  • 1 tsp. vanilla
  • 2 c. confectioner’s sugar

Directions:

Mix the first 7 cake ingredients together, then add the carrots and walnuts, mixing thoroughly. Place in two round greased and floured cake pans. Bake at 350 degrees for around 45 minutes. Do not over bake. Cool completely before frosting.

For the frosting: Mix all ingredients together until creamy, then spread on top of the cooled cake.
